In English, "beautiful" is used for two of the five senses (sight &
sound). i pe'i se ni'i bo that usage is fine.

Remember that the term "metaphor" is used rather confusingly in the Lojban literature: tanru aren't necessarily or even usually metaphors in the normal sense of the word. All you are saying with "mutce melbi bangu" is that there is some sense in which mutce modifies melbi, and that the resulting meaning modifies bangu in some way. The most obvious way would give us the sense of "very beautiful language".
