There ought not be any problem copyrighting the grammar, the words, and
all learning materials, and then licensing them such that anyone using
them has to do whatever it is that you specify in the license.

It would likely just be a matter of demonstrating to the court in question
that they're knowingly using materials you hold the copyright to, rather
than something which looks suspiciously similar.
