c2 is useful to talk about partial fasts; one could say "mi nalcti lo sligu",
for instance. But what if one never eats a particular food? Would you say "mi
nalcti lo xarju" in such a case?

Fasting also covers reduction of food intake. Then there's "juice fast". Those would not be covered by {nalcti} (not that I'm saying you asserted that).

I think 'diet' would not be a proper gloss for {nalcti}, but would fall into the reduction case.
