The first sentence says  that being a  making/maker type of cheese is the same thing as an art as much as it is a science subject. 
The second sentence says that being a  making/maker type of cheese is an art as much as it a science subject

  So the first thing you want is not zbasu cirla (maker cheese), but either cirla zbasu (cheese maker), or more precisely, zbasu loi cirla (making cheese).  And while du'i lo selsaske (selske is fine, btw) is fine, you might think about gi'e selske instead (cheesemaking is both an art and science).  Don't use the "du" construction.  It isn't applicable here.  You aren't identifying something, just characterizing it.
 


She is characteristically a funny person.
ko'a sekai xajmi prenu / ko'a kai xajmi prenu

  No.  This doesn't work.  sekai/kai is a modal.   It says that she (characterized/ or characterized by something unspecified) is a f unny person.  You want ko'a ckaji lo ka ce'u xajmi prenu (she is characterized by the property of her being a funny person).
