You can use "drata":

"ma'a nitcu lo nu cmigau pa drata prenu"
"re drata ke selcri verba cu se tolcri ca lo cabdei"

I'm not sure that "one more [than the current number]" would work
here. If the current number is five, then "We need to recruit one more
[than five] people" would mean that we need to recruit six people, and
"two more [than five] missing children were found today" would mean
that seven missing children were found today.

You need "vei" to use a MEX as a quantifier: "vei su'i pa da" / "vei
su'i pa prenu".
