I suppose that would be the English pronunciation of 'quetzalcoatl',
in Spanish it would be more like ketsalkoatl. I'd guess the
Nahuatl pronunciation would be closer to the Spanish, at
least for the vowels.

You don't need the commas, since oa can't be a diphthong in Lojban.

Do you mean to say that the one named quetzalcoatl is a feathered
serpent, or that 'quetzalcoatl' means 'feathered serpent'?
The latter would be {zoi ny quetzalcoatl ny se smuni lu pimlu since li'u}.
(I think in fact coatl is serpent, but the quetzal is a bird.)

I'd have said: zoi ny quetzalcoatl ny se smuni la'e lu pimlu since li'u
since the *meaning* is not the words "pimlu since", but what they represent.

An alternative is:
zoi ny quetzalcoatl ny se smuni mintu lu pimlu since li'u
