It's IPA.
The decision to use \textvarepsilon is not mine, it's dblatex's,
based on IPA input. I suppose I could find a way to override, but
that's a lot of characters, so I'd still want help finding all the
correspondences. Again, look at

to see what the symbols are supposed to be.
