I guess it serves a dual purpose: 1. providing a convenient way to classify the quoted text if needed (say for computer input, or where you're discussing several different languages at once) and 2. making sure clashes don't occur. Since the delimiter cannot appear in the text, the idea is to choose a delimiter that isn't. To be absolutely safe you can use a long cmene like .supykalifrajilistikekspielydocys. but.... that is just atrocious.
