I think he is simply speaking to all Pharisees. To him, all Pharisees are the same (at least in this context), so {do} refers to all of them, whether or not they are present at the dinner.

The problem with {do'o} would be that the "others" it involves needn't be other *Pharisees*, so I'd avoid it here.

(I can't quite tell which verse from Matthew 23 this is, though I guess
it's 23:27)

It's Luke 11:44.

Yeah, I realized right after sending the mail. But in Luke 11:44, he only addresses the Pharisees, not the teachers of the law, at least in the versions I have. (though the chapter as a whole is about both groups)
