{du} has always kind of confused me. How does it function? Is it a
selbri? Does it behave like a relative clause? A kind of

It is just a selbri. You can use it anywhere you can use a brivla; it
just happens to be morphologically a cmavo. The meaning of "du" could
have been given to a gismu instead; it was just decided that this word
should be especially short.
Grammatically, {du} is in selma'o GOhA; the other members of GOhA are
the selbri-position special words like {mo} and {go'i}.
