Well with {lo'u}/{le'u} and {zoi} you have two different contexts to
transcribe speech into. If you're transcribing what someone said into
{lo'u}/{le'u} then it'll be just things that are words of Lojban,
corrected to the closest word to what was said but not necessarily to
what was meant. So you could get a transcription that's like: {lo'u
.i .i .y. mi klama le .i le zarci .i mi klama le zarci le'u}. With
{zoi} you could use any transcription scheme, so you could write out
the particular sounds that were produced in IPA for instance. Or you
could just use Lojban letters as a rough way of transcribing the sound
of what someone said, like transcribing a stutter like this: {zoi
.jbobacru. mi pu zi c.c.catra .jbobacru.}. It could be fun to play
around with.
